[RECIPE]: Gluten Free Oat Bran Pancakes

Obsess much over pancakes? I could eat them all day everyday. I just LOVE me some pancakes and when they are SUPER easy and healthy, I’m all in.  And not to mention, kid approved! BONUS!! I’ve shared some other delicious pancake recipes (see my Shakeology Pancake recipe), so play with them all and have fun. Oh, and what’s KICK-A$$ about this recipe? I have to totally give my Mother-In-Law props for introducing me to this Gluten Free Oat Bran and this super easy recipe! It only takes about 3 ingredients! MAJOR BONUS!! Without further delay, here is it, hold on to your hats, people!

Gluten Free Oat Bran Pancakes

(Serves 1)

(Macro count w/ Egg Whites: C: 30g; F: 5.6g; P: 17.3g)

  • 1 egg (beaten) or 1/3 cup Egg Whites
  • 1/3 cup Gluten Free Oat Bran (I like Bob Mill’s)
  • 2 tsp of Chia Seeds or Hemp Seeds
  • 1 tsp of Vanilla Extract
  • 1 tbsp of water
  • *Cinnamon is optional, but always included whenever I can!
  • BONUS: shredded Zucchini

In a medium bowl, beat the egg, add in the Gluten free oat bran, chia/hemps seeds, vanilla, water, zucchini and cinnamon. Stir until a thick liquid consistency (don’t want it too thick or too thin). Zucchini may seem SUPER random, but it adds volume to the pancakes. Heat saute pan with coconut oil, pour mixture into pan to make about 3 pancakes (they will be about 3″ in size). Top with raw honey or real maple syrup, almond butter, sliced banana and/or more cinnamon and enjoy!! You can double or triple this recipe to feed more mouths. There is a great deal of protein in these for your kids too…easy for them to digest and filling! Even my toddler loves it!! If you need more protein, pair it with cottage cheese, yogurt or your favorite protein shake.

Oat bran has plenty of health benefits. It has more antioxidants, protein, calcium, iron, thiamin, phosphorus, riboflavin, magnesium, and zinc than regular oatmeal. It’s naturally low calorie and nutrient dense (TONS of fiber), leaving you feeling fuller longer!
