[RECIPE] Paleo-Friendly Sweet Potato Shepard's Pie

Fall is in the air, so it was time to bust out my favorite Fall recipe - Paleo-Friendly Sweet Potato Shepard's Pie.

The good news for any "dieter" - it's Paleo-friendly, gluten-free, Dairy free & Soy free.

With a small amount of prep work (cutting the veggies), I felt it was a pretty effortless meal, for the amount of food you get and the meal you'll have for the next day or so! If you have  big family or want a few more meals out of it, DOUBLE the recipe and have at it.

As you know, I'm not one to WANT to spend heaps of time in the kitchen, nor HAVE the time, so I need something that's all-in-one and does the trick to tackle each macro category I need to hit - lean proteins, carbohydrates & healthy fats, in order to continue to build lean muscle.

[PALEO-FRIENDLY] SWEET POTATO SHEPARD'S PIEPaleo Shephard's Pie
  • 2 garlic cloves, Crushed
  • 1 lb grass-fed ground beef
  • 1 large onion, finely diced
  • 1 cup frozen peas (or fresh)
  • 2-3 stalks celery, diced (optional)
  • 2-3 organic carrots, diced
  • 1-2 tsp of Worcestershire Sauce
  • 1 tbsp extra-virgin olive oil
  • 1/2 cup organic beef or chicken broth Himalayan sea salt, to taste
  • Freshly ground pepper, to taste
 

SWEET POTATO MASH:
  • 2 large sweet potatoes, sliced and quartered
  • 1/4 cup canned coconut (or Almond) milk (add more as needed)
  • 1-2 tbsp unsalted grass-fed butter
  • Himalayan sea salt, to taste
  • Sprinkled Nutmeg, to taste
DIRECTIONS: 

Preheat oven to 350. In a large cast-iron skillet, heat oil and garlic. Add sliced onions, frozen peas, and carrots and let cook for 5 minutes or until translucent. Add beef and let cook until brown. Add broth, Worcestershire sauce, Himalayan sea salt, and pepper to taste. Reduce heat and let simmer for 10 minutes.

Meanwhile, placed quartered sweet potatoes in a steamer basket and place on high. Once tender (use fork to test), place in blender or food processor (SKIN ON). Blend, adding coconut milk and butter. Place beef & vegetable mixture in an oven safe dish. Spread blended sweet potato on top of beef mixture and place in oven for 10-12 mins. Broil for 5 mins to get golden top.
